Dona's concentrates are made fresh in-house. They grind spices fresh in their mill room, steep them for over an hour in small batches in 500 gallon kettles. While steeping, the spices are in constant circulation to optimise extraction.

Cardamom | Trinidad, Santa Bárbara, Honduras
Grown by three farmers in Santa Bárbara, Honduras dedicated to diversifying their production beyond coffee to ensure steadier income. The combination of high altitude and heavy rainfall in the region make for ideal growing conditions for a better cardamom crop.
Black Tea | Upper Assam, India
Sourced from the Chota Tingrai Tea Estate in Assam, India. This women-run tea estate prioritises sustainable growing methods and the welfare of the local tea growing communities.
Rose Petal | Uttar Pradesh, India
Grown in the semi-arid region of Uttar Pradesh, where hot summers and monsoon seasons create ideal conditions for fragrant rose petals. The roses are harvested year-round, hand-picked, then sun-dried to retain colour, sweetness, and aroma.
Cinnamon | Can Bang, Vietnam
Sourced from a collective in Thach An district, Cao Bang, Vietnam. This collective emphasises sustainability, with cassia trees intercropped with anise and acacia shrubs to maintain soil fertility and crop nutrition stability.
Black Peppercorn | Kerala, India
Grown on a family farm in Thirunelly, Kerala, India. The Parameswaran family has been farming pepper for the last 35 years. This vine ripened spice is hand harvested to keep the rich flavour intact.
Ginger | Nicaragua
Grown by a collective of small farmers in Nicaragua. This collective helps farmers reach the marketplace by providing resources, financing and ensuring income through contract growing as they expand into growing more crops.
